Tasty Tuesday -- A day late


Better late than never. This is a quick and simple dessert that's good warm or cold. Some call them chess squares, but my Grandmother calls them Cheesecake squares. This last time, I added a cup of toasted coconut just to add a slightly different flavor. Enjoy!

Grandmother's Cheesecake Squares

1 box yellow cake mix
1 stick butter (melted)
1 egg

Mix together and press into 9x13" glass dish that has been sprayed with PAM.

1 8oz. pkg Cream Cheese (softened)
1 lb confectioner's sugar
3 eggs
1 tsp. Pure Vanilla Extract.
(If you want to add something else like coconut, stir it in here.)

Beat until smooth, and then pour over bottom mixture. Bake at 325 for approximately 45 minutes. This is better a little under-done than over-done. Cool and eat. Refrigerate un-eaten portion.

  2. i think in the future, toasted coconut should become a permanent ingredient in these—it adds even more decadence to something that’s already pretty stellar!
